Recipe: Red Radish Salad

Red radishes have almost no nutritive value. They contain no vitamin A, are very low in protein, and contain only a little vitamin C and potassium. However, they are good filler in salads. They can also pickled or used in stir fry veggies or soups. They also can be used to make a variety of food decorations on a buffet table!

RECIPE:RED RADISH SALAD

Ingredients:

2 tsp sugar
1 lemon, juiced
1/2 cup sour cream
8 red radishes, thinly sliced
2 apples, quartered cored and thinly sliced
1/2 cucumber, thinly sliced
1/2 carrot, cut into thin strips
2 tbs chopped fresh dill
Salt and black pepper

Method:

Combine sugar, lemon juice, and sour cream in a medium bowl with a fork. Add radishes, apple, carrot and cucumber.
Turn vegetables and fruit in dressing to coat.
Season with dill, salt, and pepper, toss again; serve.
