My three and a half days on a raw food diet.

For those of you taking bets on how long I would last, I caved. And then again, I didn't. Most raw foodists consider 75%+ of your diet to be a successful raw diet. I've gone three and a half days at probably 95% raw foods. Tonight I needed something hot. lol

Tonight, I'm having a lovely mexican chicken soup. Apart from the microscopic bites of chicken, it is all veggies, and the calories are really great, so even this isn't a defeat. Pretty much everyone agrees that there's no way to go on a raw food diet cold tofurkey. Ha! I made a vegan joke. Somebody shoot me.

I haven't hated it as much as I thought I would, but I still don't plan on doing it permanently. I live in the midwest, and as we say around here, if it doesn't eat corn, we don't eat it. And no, I don't know any cannibals. But it is pretty difficult to plan meals that don't revolve around meat. The vegetable selection is pitiful here, because we grow corn and soybeans. And let me clue you in on something. Around these parts, you'll get your butt kicked for eating edamame.

If you're looking for a good veggie meal, I've got one for you, but do it smart. A good rule of thumb is to make the meal as colorful as you can. Read below for an example.

I've been having a lot of mixed green salads. I top these with mushrooms, carrots, tomatoes, olives, turtle beans (black beans), avocados, and a little red onion. Some people put fruit on, and while I don't care for it, it adds to the flavor. Top this with salsa as dressing, or if you want to, go ahead and add a little ranch dressing to the mix. It makes a huge meal, and it's pretty yummy. The trick is just to make this beautiful salad that has a whole rainbow on it. All the good stuff that makes tomatoes red is the same stuff that makes it good for you.

Tommorow, it's back on for breakfast and lunch. After all, I have a LOT of bananas and peaches to get rid of. And I haven't even touched the watermelon yet. :D
