Marinated Cucumber Salad:

Ingredients:

3 medium cucumbers, thinly sliced
1 medium onion, sliced and separated into rings
1 cup thinly sliced carrots
1/2 cup sliced celery
2 to 4 tbs chopped red bell pepper
1 cup vinegar
1/4 cup olive or vegetable oil
1/4 cup sugar
1 tsp fresh chopped celery
Salt and pepper to taste
Iceberg lettuce

Method:

Combine cucumbers, onion, carrots, celery, and red bell pepper in a large bowl.
In a separate bowl, mix remaining ingredients except lettuce.
Pour over vegetables and toss lightly.
Cover and chill 8 to 10 hours.
Drain and serve in a lettuce-lined bowl.

This sounds really good. I do have a question, though. Can the iceberg lettuce be substituted with romaine or spinach? Those are my preferences for salads.
