Herbal teas are also called infusions. They are a simple and delicious way to extracting the goodness and flavour from the aerial parts of herbs. You can either use fresh or dried herbs to make such tea, but remember you need to use twice as much as fresh plant material as dried. If you fin the taste of some herb teas bitter, sweeten them with a little honey, or just add ginger. Here's more on how to make herbal tea....

1) Put the herb in a pot. Standard strength tea is made with 1 tsp dried or 2 tsp fresh herbs to 1 cup of water.

2) Strain and drink as required. You can drink them both cold and hot. Though cold teas are thoroughly invigorating.
