Low Country Boil Recipe

Recipes

Get yourself a bag of frozen shrimp (our local grocery store runs the 1lb bags at B1G1 fairly often...it's a great deal!), some frozen mini corn on the cob, a smoked sausage (no, that's not a euphemism!), and some red new potatoes.

Cut up your potatoes. Halves or quarters, whatever you like. Cut up the sausage into slices. Throw them both in a pot of boiling water with some crab boil. After about 20 minutes, add corn. Cook for about 10 minutes, then add your shrimp. No more than 3 minutes or so on the shrimp...take it off the heat as soon as they look pink or you'll overcook them.

All of the quantities can be adjusted to taste -- we like more meat, so we use more shrimp and sausage and less potatoes and corn. If you want more bang for your buck, skimp on shrimp and increase the potatoes. It's all up to you. And of course you can use fresh shrimp or corn or whatever...we just find it's cheaper/easier to get frozen. Add some crusty French bread or some yummy garlic bread and this is a really good, simple meal.

Can you tell I'm already looking forward to dinner? (And if you're wondering, most of my recipes are a bit more precise...this is just one of those quick & easy ones that we throw together form time to time!)
