I baked an actual cake that didn't suck!

Since my darling son was diagnosed with something like 30 food allergies, mealtime has been daunting. His birthday is coming up and I've been working hard to find a proper cake for him. Proper, hell, EDIBLE is really what I'm looking for.

I can't use any normal grains like wheat or any normal flour, nor eggs, nor vanilla, nor chocolate... The "no" list is much longer than the "yes" one. But I found this great book called "The Gluten-Free Kitchen" by Roben Ryberg and she actually has created edible recipes that use only cornstarch and potato starch as flours. So far I've made bread, pancakes, and now the cake. It's amazing!

I was so proud of last night's cake that I drove pieces to my parents and my grandma at 8pm last night. I called and said, "I'm bringing you cake!" It was fun!

I never baked anything from scratch before these allergies were diagnosed. Now I'm becoming a regular in the kitchen. I still don't love it, but when the results are actually edible, it's kind of fun. I hope that my days of throwing out the food AND the pan I baked it in are over.

I am glad that you found a cake recipe that your son can enjoy!! hopefully the book you bought will make meal time less of a hassle for you! i am rooting for you in the kitchen!!

you're my hero!

you are amazing! mother of two and you still find the time to write and BAKE and not just bake out of a box...but actually BAKE! how do you manage your time, because lord knows i need some tips on that end. yikes!

Oh, you are too sweet

You know, you just do what you have to do. And believe me, I wouldn't be baking if I didn't have to.

I have a helpful husband and I've structured my house to require as little maintenance as possible, so that makes it a bit easier :)
