2 cups unbleached flour
1 cup sugar
1 cup brown sugar
1/2 cup vegan cocoa
1 teaspoon baking powder
1 cup chocolate soymilk
3/4 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup chopped pecans, more or less! (optional)
1. Pre-heat oven to 350, and pop in your pecans (or other nuts) before you chop ‘em up. (This makes for better tasting brownies!)
2. Mix flour, sugar, cocoa, baking powder, salt in one bowl.
3. Add the milk, oil, vanilla extract.
4. Chop up nuts in a food processor and stir them in as well. Mix well. Consistency will be that of frosting.
5. Grease and flour a 9x13 inch pan and pour mix into pan.
6. Bake for 25-30 mins. Brownies are done when top is firm.
7. Allow to cool 10-20 minutes. These brownies are REALLY chewy!
Some have found they have to put the pan back in the oven for a few more minutes. This is because oven temperatures vary from one person’s oven to another. But they do make good brownies!
I say to hell with militant vegans. I’m just a woman who got sick and tired of being sick and tired. I changed the way I ate and threw meat, dairy and eggs out of my diet and went from not being able to peel myself off the couch to running seven miles a day. I don’t recommend veganism for everyone and I don’t recommend trying to become one overnight. It’s a commitment to a way of life- and if you’re the kind that can hack it, you’ll never bat an eye about going back.
My goal is to lead people to veganism by being a good example- not shoving it down their throats!
