Oriental Chicken Salad

2 lbs Cole Slaw mix
1 bunch green onions cut into slaw
4 pkgs. Ramen Noodles
1/4 cup butter or marj.
1/2 cup slivered almonds
4-6 cups cooked chopped chicken (I just use the meat off a rotisserie chicken)
Place cole slaw mix in a large bowl, mix in green onions. In frying pan melt the butter then crunch up the Ramen noodles in the bags they're in and then dump into skillet, removing the seasoning pack. Add the almonds to the frying pan too. Stir constantly until the noodles and almonds are lightly browned.
Just before serving add browned noodles to the slaw mix. Stirring well, add the dressing.
Dressing:
1 cup water
1/2 cup vegetable oil
1/2 cup sugar
1/4 cup vinegar
3 Tablespoons soy sauce
Place all the ingredients in a pint size jar and shake well. Just before serving toss the salad with the dressing.

Banana Nut Bread Recipe

2 ripe bananas mashed
2 eggs
1 3/4 cup flour
1 1/2 cup sugar
1/2 cup oil
5 Tablespoons buttermilk
1 teaspoon baking soda
1 teaspoon vanilla
1/2 tsp salt
1/2 cup nuts (optional)
Combine all ingredients and mix well. Pour into greased and floured loaf pan and bake about 1 hour and 20 minutes at 325 degrees. Makes 1 loaf.

When it comes time to prepare and file your 2006 tax return, make sure you don't overlook the "federal excise tax refund credit." You claim the credit on line 71 of your form 1040. A similar line ill be available if you file the short form 1040A. If you have family or friends who no longer file a tax return AND they have their own land phone in their home and have been paying a phone bill for years, make sure they know about this form 1040EZ-T.

This pound cake is a bit creamier in texture with a rich flavor that comes from the addition of sour cream.
Serves 16
Prep Time: 20 minutes
Bake Time: 1 to 11/2 hrs.
3 cups flour
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 cup butter, softened
2 cups sugar
1 tsp vanilla
1 tsp almond flavoring
6 eggs
1 cup sour cream
Preheat oven to 350 degrees. Grease and flour Bundt pan, tube pan, or two loaf pans.
Another Story from a Girl Raised in Alaska
Submitted by busymom on July 5, 2006 - 8:52amOften on long dark winter evenings my dad would read to us. I think my favorite book was Heidi. As he read to us about Heidi and the Alms Uncle eating goat cheese and bread, we would pretend to be characters from the book. We really had goat cheese made from the milk from the goats we had on the farm. My dad would take the cheese and toast it in the fire in the barrel stove. Our cabin was heated by this stove, and it often served as an oven as well. I can remember my dad baking us birthday cakes in a Dutch oven on top of the barrel stove. It was tricky baking, but well worth it.

A little more about Alaska

As I wrote in my previous "Alaska" blog entries, My family (Mom, Dad, Sister and I) moved up in the spring of 1976. That summer we lived in a tent. I don't remember it being too difficult, but then I was 3 yrs old when we began this adventure.
Since it stays light most of the day and night during the months of May, June and July, getting to bed early wasn't too heavily enforced.

Where's USA Pride?
Submitted by busymom on March 30, 2006 - 8:22pmI'm from TX and with the Immigration Reform issue going on in Congress, the Mexican population here is up in arms. They've had so many walk-outs from the local highschools, it's really crazy.
My husband and I were just talking and thought, "Wow, they're waving Mexico's flag, but want to stay in the USA!" Where is the USA's flag! If these people really want to stay in our country, shouldn't they be chanting "USA, USA"?

Galveston or the Bahamas?
Submitted by busymom on March 28, 2006 - 7:41pmMy hubby & I are coming up on our 12th anniversary. Yeah! 1 dozen yrs! We're wanting to get away at the end of April and were thinking of driving down to Galveston, TX (we live in the DFW area).
Does anyone know of a nice romantic place there by the beach? We've been looking online and have found 2 places that might work.
I'd love to go to the Bahamas, but don't know if I have to have a passport to go there, so figured staying in the USA would be the safest.
